Monascus powder, Monacolin, is a natural red pigment. Monascus is steamed with glutinous rice and then inoculated with Monascus strains, fermented and propagated. Koji is the Aspergillus fungus, Monascus purple, also known as Monascus. Natural Monascus is cultivated and fermented in rice with Monascus.
