What is papain?

Chemical properties of papain:

The isoelectric point (pI) is 8.75; the suitable temperature is 55~65℃ (generally 10~85℃), It has a strong heat resistance and will not be completely inactivated at 90 °C; it is inhibited by oxidants and activated by reducing substances.

1. Food industry applications
